About the Beans : Ethiopia - Chelbessa

The washing station is located in the village of Chelbessa, in the Gedeo zone and it stands at an altitude of over 2,000m.
The coffee grows here in semi-forest, under shade trees and close to food crops such as bananas. Hundreds of local growers drop off their coffee at the washing station where it gets sorted by size and quality, this coffee being a Grade 1, which represents the best quality.
After sorting, the cherries are left in the shade for 45 to 60 hours for a slow fermentation process, before being washed to remove all mucilage. The coffee is then spread out in a layer 5 to 10 cm thick, and dried for 7 to 10 days till it gets to the right humidity.
