Missing Bean Bakery
After opening our first Cafe back in 2009, and then roasting our own coffee in 2013, the next step in the Missing Bean journey was to open our in-house Bakery in 2023.
Our Missing Bean Bakery provides our Cafes with freshly baked sourdough bread, sweet and savoury artisan pastries, handmade focaccia sandwiches, and much more, daily.

Our Bakery Team
Jess McHugh - of local Oxford fame @silviecake - is our amazing Head of Food and oversees our menu choices, product development, and keeps the wheels in motion!
Alongside Jess we're lucky to have Molly, our Head Baker, who runs the show for all things bread & pastry.
Not forgetting the rest of the team who all offer valuable support and expertise who we wouldn't be without.
Evergreen Bakery Items
Our core items are what you'll see across our Cafe counters every single day.
These include Sourdough Loaves, Plain Croissants, Pan Au Chocolate, Pain Au Raisin, Almond Croissants, as well as Cakes, Focaccia Sandwiches, and Toasties.
We use only the best ingredients for our Sourdough Bread and Sandwiches - a mix of regeneratively grown British flour from Bruern Farms & Mathews Mill.
Seasonal Specials
Alongside our evergreen range, Jess & the team also have a bit of fun experimenting and adding a fresh, seasonal feel to the offering.
Limited edition sweet & savoury pastries, cakes & biscuits, can all be found on our counters on a weekly basis, or when there's a special event or date in the calendar such as Christmas or Valentines.
Our sandwich and toastie fillings also move with the seasons.

Can I order cakes or pastries for events?
Yes. We can make cakes, pastries and other bakery items for events. Please get in touch with us at bakery@themissingbean.co.uk and we’ll let you know what’s possible.
Do you offer corporate or office catering?
Yes. We can help with office breakfasts, meetings, events and larger orders. Please email bakery@themissingbean.co.uk with the date, number of people and what you’re looking for.
Do you offer gluten-free products?
We sometimes offer cakes made with lower-gluten ingredients on our counter, but our bakery handles wheat and other gluten-containing ingredients every day. Because of this, our products are not suitable for coeliacs or anyone with a severe gluten allergy.
Do your products contain nuts or allergens?
Some of our products contain nuts and other allergens, and we use nuts throughout the bakery. Because everything is made in the same kitchen, we cannot guarantee that any product is free from traces of allergens.
Where can I find allergen information for your products?
You can find allergen information on our website, by scanning the QR codes in store, or by asking a member of the team.
Where does your flour come from?
We use a mix of carefully sourced flours, including locally grown and milled flours where possible. This includes Bruern regenerative-grown wheat and flour from Matthews Cotswold Flour.
Why do you sometimes sell out early?
Everything is made fresh and in small batches, and some products sell quickly. We also try hard to keep food waste as low as possible, which means we don’t overproduce. When we do have products left at the end of the day, we usually run an end-of-day sale.
How much notice do you need for bakery orders?
For cakes, pastries and larger bakery orders, the more notice the better. We usually ask for at least 72 hours’ notice, but for larger events or custom orders, please contact us as early as possible.
Do you always have the same products available?
Not always. Our bakery range changes depending on the season, what the team is working on, and what sells well in the shops. Some products are regulars, while others come and go, and not every item is available in every shop. The offer can vary from place to place and day to day.
