About the Beans:
This coffee from the Carmo de Minas region, South Minas Gerais, was grown at altitudes ranging from 1000-1300 masl. The cherries are carefully picked when they are fully ripe, then sorted using a density sorter called "lavador" to ensure the low density beans are seperated, which makes roasting easier and more consistent. The beans are then sun-dried on patios for three days before being finished in mechanical dryers to achieve the optimal moisture level.
