Frequently Asked Questions

What's in the Missing Bean Chocolate Discovery Pack?

Our Chocolate Discovery Pack contains all six of our chocolates in 25g bars: Brazil 81%, Brazil 75% with Lime & Black Pepper, Costa Rica 85%, Costa Rica 77% with Sea Salt & Cacao Nibs, Peru 75% and Peru 73% with Coffee & Walnut.

Where is Missing Bean chocolate made?

All our chocolate is made bean-to-bar in our Oxford roastery. We roast the cacao ourselves, sourcing beans from producers we know and trust.

What ingredients are in Missing Bean chocolate?

We keep things simple, with high cacao percentages and just cacao and sugar. Where we add something, like lime, sea salt or walnut, it's chosen to bring out the best in that particular bean.

Is the Chocolate Discovery Pack vegan?

Yes, every bar in our Chocolate Discovery Pack is vegan. Please note the Peru 73% bar contains walnuts.

Can I learn more about how the chocolate is made?

Yes. Our Chocolate Tasting Workshop takes you through our whole range and explains how we make bean-to-bar chocolate.

Is Missing Bean chocolate bean to bar?

Yes. We make every bar ourselves from raw cacao beans at our roastery in East Oxford: sorting, roasting, cracking, winnowing, grinding, tempering and moulding. We never buy in ready-made chocolate to remelt.

How do you make your chocolate?

We hand-sort each batch of beans, then roast them for around 20 minutes in our repurposed Giesen coffee roaster. A cracking and winnowing machine separates the husks from the nibs. Next, the nibs go into our melangeur, where two stone wheels grind them for 24 hours into cacao liquor. We then add British beet sugar and refine for a further 24 hours. Finally, we sieve and temper the chocolate, and set it in moulds at around 13°C.

What’s in your chocolate?

Our pure bars contain just two ingredients: cacao and British beet sugar. There’s no added cocoa butter, emulsifiers or vanilla. The only fat is the cacao’s own natural cocoa butter, which is released during grinding.

How long does it take to make a bar?

Grinding and refining alone takes around 48 hours in the melangeur. After that, the chocolate is sieved, tempered, moulded and left to set before every bar is inspected, weighed and wrapped.

Why do you roast cacao in a coffee roaster?

Roasting shapes flavour and aroma in cacao just as it does in coffee. That’s why we use the same Giesen roaster and roasting know-how behind our coffee, giving each origin its own profile.

How are inclusions added to your bars?

It depends on the recipe. Some go into the melangeur so their flavour runs through the whole bar, like the coffee in our Coffee & Walnut bar. Others are set into the top of the bar for crunch, like the blanched walnuts on the same bar.

How long does delivery take?
